Cappuccitti Croquettes


11⁄2 pounds large white Champion brand potatoes mashed 3 eggs
1⁄2 cup grated Parmesan cheese
1 tablespoon parsley, finely chopped
Salt and pepper to taste
1⁄4 cup flour
2 eggs, slightly beaten
1 tablespoon water
3/4 cup breadcrumbs
Vegetable oil for frying


Gently combine the mashed potatoes with 1 egg slightly beaten, Parmesan cheese, chopped parsley, salt and pepper.

Using a scoop or your hands, divide and shape the mixture into little croquettes and set down on a baking tray or large platter.

Prepare 3 shallow bowls to dredge the croquettes. The first bowl with flour, the second with the remaining two eggs slightly beaten, and the third with the breadcrumbs.

One at a time, roll the croquettes in the flour, shaking off any excess, then in the eggs, followed by the breadcrumbs.

Fill a deep fry pan halfway with vegetable and heat over medium-high heat.

Working in batches, add the croquettes in a few a time and fry for a few minutes on each side until they become golden.

Drain on paper towel and serve immediately. They can be sprinkled with additional Parmesan or chopped parsley before serving.
