Potato Croquettes
Potato croquettes are delicious, crispy bites made from mashed potatoes, often blended with cheese, herbs, or other ingredients. They can be breaded and either fried or baked. Here’s a simple recipe to make this tasty dish:
Ingredients
- 2 cups of mashed potatoes – equivalent to about two large potatoes
- 1 cup of shredded cheese – cheddar, mozzarella or your choice
- ¼ cup of flour – plus more for dusting
- 1 egg, beaten
- 1 cup of breadcrumbs
- Salt and pepper for taste
- Oil for frying, if you choose to fry
Instructions
Prepare the potatoes—If you haven’t already, cook and mash the potatoes, allowing them to cool. You can reference our previous mashed potato recipe.
Mix in Ingredients: In a bowl, combine the mashed potatoes, cheese, green onion, flour, salt, and pepper. Mix all ingredients until well combined.
Shape the Croquettes: Take a small amount of the mixture and form it into a ball. Repeat this process until you have used all the mixture.
Coat the Croquettes: Dip each croquette into the beaten egg, then roll it in breadcrumbs until fully coated. If desired, chill them in the fridge for about 30 minutes. This step helps the croquettes hold their shape.
Fry or Bake: Choose your preferred cooking method.
Frying: Heat oil in a pan over medium heat. Fry the croquettes until golden brown, about 3 – 4 minutes per side. Drain on paper towels.
Baking: Preheat the oven to 400°F (200°C). Place the croquettes on a baking sheet lined with parchment paper, spray them lightly with cooking oil, and bake for 20–25 minutes, turning halfway through until golden.
Serve: Enjoy the croquettes hot, either plain or with dipping sauces such as ketchup, aioli, or sour cream.
