A Potato Frittata is an easy, comforting dish that’s perfect for any meal of the day! It’s essentially a thick, flavorful omelette packed with potatoes and any other ingredients you want to add. Here’s a simple recipe to make a delicious and hearty potato frittata.
Ingredients:
– 3 medium sized potatoes, about 1 pound
– 6 large eggs
– 1 medium onion, thinly sliced
– 1 bell pepper, chopped
– 1 cup of shredded cheese, cheddar, mozzarella or parmesan are great choices
– 2 tablespoons of olive oil or butter
– 2 gloves of garlic, minced
– Salt and pepper, for taste
– Fresh herbs like parsley, thyme, basial are optional for taste
Instructions:
Prepare the Potatoes: Peel and thinly slice the potatoes into 1/8-inch-thick rounds, you can also dice them if you prefer. In a large pan, heat 1 tbsp of olive oil or butter over medium heat. Add the sliced potatoes and cook for bout 10-12 minutes, stir occasionally, until they are lightly golden. Season with salt and pepper as they cook.
Cook the Vegetables: in the same pan, add another tablespoon of olive oil or butter. Sauté the onion over medium heat for about 5 minutes. Add the minced garlic and gook together for another minute. If you’re using fresh herbs, add them to the pan at this point.
Combine the Potatoes and Vegetables: Once the onions and garlic are cooked, return the potatoes to the pan and mix everything together. Adjust seasoning with more salt and pepper if needed.
Prepare The Egg Mixture: In a large bowl, whisk together the eggs, a pinch of salt and pepper, and any herbs or chili flakes you’d like to add. If you’re using cheese, mix in about half of it into the egg mixture, saving the rest to sprinkle on top.
Cook the Frittata: pour the egg mixture over the potatoes and vegetables in the pan, making sure it spreads evenly. Cook over medium-low heat for about 5-7 minutes. Once the edges are set and the bottom is golden, sprinkle the remaining cheese on top.
Finish in the Oven: This step is optional but recommended. Preheat the oven to 375°F. Transfer the pan to the oven and bake for 8-10 minutes, or until the top is golden and the frittata is fully set in the center.
Serve: Let the frittata cool for a few minutes before slicing. Serve warm or at room temperature. It pairs wonderfully with a simple salad or a side of toast!
