Potato soup is a crowd-pleaser and a great dish for chilly nights or whenever you need some comfort food! Here’s a creamy and hearty potato soup recipe that’s perfect for a cozy meal. It’s rich, flavorful, and packed with tender potatoes, veggies, and bacon.
Ingredients:
– 4 large Russet potatoes, peeled and diced
– 1 medium onion, chopped
– 2 cloves of garlic, minced
– 4 cups of chicken or vegetable broth, depending on your preference
– 1 cup of heavy cream, for richness
– 2 tbsp of butter
– 2 tbsp of olive oil
– 1 cup of shredded cheese
– ½ cup of sour cream,
– 1 tsp of dried thyme
– ½ tsp smoked paprika, optional to add flavour
– Salt and pepper to add taste
– 6 slices of bacon, cooked and crumbled, optional for garnish and flavour
– Chopped green onions, optional for garnish
Instructions:
Prepare the Potatoes: Peel and dice the potatoes into bite-sized pieces. Set aside.
Sauté the Vegetables: In a large pot, heat 2 tbsp butter and 2 tbsp olive oil over medium heat. Add the chopped onion and cook for about 4-5 minutes, or until soft and translucent. Add the minced garlic and cook for another minute until fragrant.
Cook the Potatoes: Add the diced potatoes to the pot and stir to coat with the butter and onions. Pour in the chicken broth, making sure the potatoes are just covered. Stir in the thyme, smoked paprika, salt, and pepper. Bring to a boil, then reduce the heat and let it simmer for about 15-20 minutes, or until the potatoes are fork tender.
Blend the Soup (Optional): For a smoother soup, use an immersion blender directly in the pot to puree about half of the soup. You can also transfer half of the soup to a blender and pulse it before returning it to the pot. Leave some potato chunks for texture if you prefer a chunkier soup.
Add the Cream: Stir in the heavy cream and sour cream for richness and creaminess. Let it heat through for about 3-5 minutes, then taste and adjust the seasoning with more salt and pepper if needed.
Serve: Stir in the shredded cheddar cheese until melted and incorporated. If you want extra creaminess, add more sour cream or cheese. Ladle the soup into bowls and top with crumbled bacon, extra shredded cheese, and chopped green onions. You can also sprinkle some fresh parsley for color.
