Potato skins are a beloved appetizer or side dish made from the outer skin of a baked potato, which is typically scooped out and then filled with a variety of delicious ingredients. Ingredients:
– 4 large russet potatoes
– 2 tbsp olive oil
– Salt and pepper, for taste
– 1 cup shredded cheddar cheese
– 4 slices of bacon, cooked and crumbled, optional based on preference
– ¼ cup of sour cream for topping
– 2 tbsp green onions, chopped for garnish

Preheat the Oven: Preheat your oven to 400°F (200°C).
Prepare the Potatoes: Scrub the potatoes clean and pat them dry. Pierce each potato several times with a fork to allow steam to escape while baking.
Bake the Potatoes: Place the potatoes directly on the oven rack and bake for about 45-60 minutes, or until the potatoes are fully cooked (fork tender). Alternatively, you can wrap them in foil if you prefer a softer skin. Once baked, remove them from the oven and let them cool for about 10 minutes.

Cut the Potatoes: Slice each potato in half lengthwise. Carefully scoop out the insides, leaving about a 1/4-inch border of potato around the skin (you can save the scooped-out potato for mashed potatoes or soup).
Season the Potato Skins: Brush the inside and outside of the potato skins with olive oil and sprinkle with salt and pepper. For extra flavor, you can also add garlic powder or smoked paprika at this stage.
Bake the Potato Skins: Place the potato skins on a baking sheet, cut side up. Bake them in the preheated oven for about 10-15 minutes, or until the skins are crispy and golden brown.
Add the Toppings: Once the potato skins are crispy, remove them from the oven. Sprinkle each skin with shredded cheddar cheese and crumbled bacon. Return the skins to the oven for another 5-7 minutes, or until the cheese is melted and bubbly.
Serve: Once out of the oven, top the potato skins with a dollop of sour cream, a sprinkle of chopped green onions, Serve hot!
